My very first contribution to the 360nobs ….and I’m loving it!
Deciding what to feature was a tad difficult till something Noble mentioned in his e-mail came to mind. “Some men like us can’t cook to save our cat”. Well, here’s to saving a few cats.
This is an easy, bung-it-all-in breakfast, brunch and even light dinner I serve my family. You can basically do it with whatever veggies, meat(s), you have and vary it every time. Mine always comes out differently. Give it the name you would like – I call it Kuluwaz’s Frittata.
Prep Time: About 30 mins if you already have your meats and tatties pre-cooked.
Cooking Time: 10 mins on the burner, 20 mins in the oven.
PS: I never cook with measurements which is why I avoid baking mostly:Dso go with portions that work for you. Cheers!
Cubed cooked Potatoes
Cooked Meatballs and Sausages
3Eggs(and it would depend on preference)
Green and Red Peppers
2. Add the potatoes and cook a further 3 mins. Add the peppers and fry for about 3 mins. Add any meats you are using. You can substitute the meatballs and sausages for canned tuna, chicken pieces, whatever you like really. Ensure there is a bit of liquid from the meats.
5. Break the egg yolks lightly or they will dry up in the oven.
Pour over the potato dish,
and sprinkle some Paprika if you like (iLike!).
6. Pop into the oven, covered in foil for a minimum of twenty minutes if you want it softly scrambled like I did today or about thirty minutes if you want it to set like a pie.
Either way, its equally delicious……Give it a try and I will love feedback from anyone who tries it out.
